Cut the small eggplant into half inch thick rounds.
Place the eggplant rounds on a paper towel lined baking sheet.
Sprinkle the eggplant rounds with plenty of coarse sea salt.
Let the eggplant sit for 15 to 20 minutes to draw out the liquid and bitterness.
Wipe off the water and salt with a paper towel.
Drizzle olive oil over the eggplant rounds and coat each round well with your hands.
Season with herb salt if desired.
Preheat the grill to 450 degrees Fahrenheit.
Place the eggplant rounds on the grill and cook for 5 to 6 minutes on one side, closing the grill lid.
Flip the eggplant rounds and grill for another 5 to 6 minutes on the other side.
Sprinkle with freshly chopped parsley for garnish before serving.
