Soak mushrooms in 4 to 5 cups of water for 15 to 20 minutes to darken the water.
Boil the soaked mushroom water over medium to high heat for 15 to 20 minutes.
Transfer the boiled water into a colander to separate the mushrooms from the black water.
Blend the leftover mushrooms with 2 cups of water to extract more black juice.
Heat olive oil in a pan over medium-high heat and sauté scallions for 1-2 minutes.
Add the black water to the pan and bring it to a boil.
Add shrimp to the boiling water and cook for 2-3 minutes.
Add parsley, thyme, crushed cloves, and habanero pepper to the boiling mixture.
Add washed black rice to the pan and stir well.
Cook the rice over medium-high heat for about 30 minutes until the water level is below the rice.
Reduce the heat to low and cover the pan, cooking for an additional 30 minutes until the rice is fully cooked.
