1 tbsp Soy Sauce
2 tbsp Mayonnaise
1 tbsp Chilli Sauce
1/2 Lime
2 stalks Green Onion
2 cups Short Grain Rice
1/2 cup Rice Vinegar
1/2 cup Sugar
6 Rice Papers
6 Nori Seaweed Sheets
1/2 Cucumber
1 Avocado
1 cup Pea shoots or any of your favorite sprouts
Takoyaki Sauce
Sesame Seeds

Preheat oven to 375 deg. F.

Season salmon with salt and pepper. Add a squeeze of 1/2 lemon juice on top.

Bake in the oven for 15 minutes.

Flake the salmon with a fork.

In a large bowl combine soy sauce, mayonnaise, chili sauce, and lime juice.

Mix salmon flakes into the sauce and set aside.

Wash and clean rice and cook in the rice cooker.

Combine and heat in the saucepan rice vinegar, sugar, and 1/2 tsp of salt. Heat until the sugar has dissolved.

Add the vinegar mixture slowly into the hot rice and fan to cool and produce a polished shine.

To make the wrap, place soaked rice paper onto a wet towel, and add a nori sheet on top.

Add a thin layer of sushi rice and add a layer of spicy salmon on top. Add a squeeze of lemon juice on top.

Next add some pea shoots, cucumbers, and slices of avocado.
