Heat oil in a pan.
Add diced beef to the pan and fry until browned, about 5-7 minutes.
Transfer cooked beef to a bowl and set aside.
Add a touch of oil to the pan and add chopped onions; fry until softened.
Add garlic and cook for 2 minutes, stirring to prevent burning.
Add plain flour to the onion and garlic mixture and stir well to combine, cooking for a few minutes to remove raw flour taste.
If the mixture is too thick, add a tiny bit of water and stir well.
Prepare beef stock using a stock pot and mix with 400 ml of water; let simmer for a minute.
Add Guinness to the mixture and stir well.
Add Worcestershire sauce and tomato puree, mixing thoroughly.
Season with salt and pepper to taste.
Transfer the mixture to a slow cooker and add the browned beef.
Cook on high for 3 hours to tenderize the meat.
While the mixture cooks, roll out pastry on a floured surface to about 1-1.5 cm thick.
Prepare individual pie cases for the filling.
After 3 hours, check the mixture; if too liquid, reduce on the hob until thickened.
Fill pie cases with the beef mixture, adding gravy as needed.
Optionally, crumble Stilton cheese into some of the pies before adding gravy.
Cover the pies with pastry lids and seal the edges.
