Instructions
- 1Prepare callaloo by washing and chopping it finely.
- 2Cook callaloo in a skillet over medium heat until wilted, about 3-4 minutes.
- 3In a bowl, combine cooked callaloo, chopped chicken, flour, cornmeal, and baking powder.
- 4Add finely chopped onion, garlic, scallions, bell pepper, thyme, black pepper, salt, cayenne pepper, and lime juice to the mixture.
- 5Mix until all ingredients are well combined.
- 6Form the mixture into small patties or bites.
- 7Heat vegetable oil in a deep skillet over medium-high heat until shimmering.
- 8Carefully add the chicken and callaloo bites to the hot oil, frying in batches as needed.
- 9Fry until golden brown, about 3-4 minutes per side.
- 10Remove bites and drain on paper towels to absorb excess oil.
- 11Serve warm with dipping sauce or lime wedges.

Instructions
- 1Prepare the vegetables by washing them thoroughly.
- 2Cut the broccoli and cauliflower into florets, and slice the carrots.
- 3In a large pot, bring about 1 inch of water to a boil.
- 4Place a steamer basket over the boiling water, making sure it doesn't touch the water.
- 5Add the broccoli, cauliflower, carrots, and snap peas to the steamer basket.
- 6Cover the pot with a lid and steam the vegetables for about 5-7 minutes, or until they are tender but still crisp.
- 7Remove the pot from heat and carefully take off the lid to avoid steam burns.
- 8Transfer the steamed vegetables to a serving bowl.
- 9Drizzle with olive oil, and season with salt, black pepper, and garlic powder. Toss to combine.
- 10Serve immediately.

Instructions
- 1Preheat the oven to 375ยฐF (190ยฐC).
- 2In a bowl, mix together soy sauce, brown sugar, garlic, ginger, and black pepper to create a marinade.
- 3Place the pork tenderloin in a resealable bag and pour the marinade over it. Seal the bag and refrigerate for at least 1 hour, preferably overnight.
- 4In a large oven-safe skillet, heat vegetable oil over medium-high heat.
- 5Remove the pork from the marinade and sear it in the skillet for about 2-3 minutes on each side until browned.
- 6Add the pineapple chunks and remaining marinade to the skillet with the pork.
- 7Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the pork reaches an internal temperature of 145ยฐF (63ยฐC).
- 8Remove the skillet from the oven and let the pork rest for 5 minutes before slicing.
- 9Serve the sliced pork topped with the pineapple and sauce, garnished with chopped green onions.
