Irish Beef Pies

1 lb ground beef
1 cup diced onions
2 cloves garlic, minced
2 cups beef broth
1 cup frozen peas and carrots
2 tbsp Worcestershire sauce
1 tsp dried thyme
1 tsp salt
1/2 tsp black pepper
1 package (2 sheets) refrigerated pie crusts
1 egg, beaten (for egg wash)

Preheat the oven to 425°F (220°C).

In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.

Add the diced onions and minced garlic to the skillet, cooking until the onions are translucent.

Stir in the beef broth, frozen peas and carrots, Worcestershire sauce, thyme, salt, and pepper. Bring to a simmer and cook for about 10 minutes until slightly thickened.

Remove the skillet from heat and let the filling cool slightly.

Roll out one pie crust and fit it into a 9-inch pie dish. Pour the beef filling into the crust.

Cover the filling with the second pie crust, sealing the edges. Cut slits in the top crust to allow steam to escape.

Brush the top crust with the beaten egg for a golden finish.

Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown.
