Heat mustard oil in a pan over medium-high heat.
Add cumin seeds and black mustard seeds to the oil and let them infuse for a few seconds.
Add fresh curry leaves to the pan.
Sauté chopped onion for about 3 minutes until translucent.
Add garlic ginger paste (1 tablespoon) and stir.
Add the cooked yellow chana to the pan and season with salt; sauté for another 3-4 minutes.
Chop and add ripe tomato and fresh chili to the mixture, cooking for about 5 minutes until the tomatoes break down.
Stir in turmeric powder (1 teaspoon), coriander powder (2 teaspoons), and chili powder; mix well.
Add 400 ml of coconut milk and reduce heat to low, simmering for 20 minutes.
Finish with a pinch of garam masala and fresh cilantro, mixing well before serving.
