Wash the pork shoulder with salt and squeeze 1-2 lemons over it, rubbing the lemon juice all over the meat.

Chop half an onion, removing the dry parts, and place it in the blender.

Cut the green pepper in half, removing the seeds and middle part, and add it to the blender.

Add the cilantro to the blender, adjusting the amount based on personal preference.

Blend the onion, green pepper, and cilantro with a little water until smooth.

Pour the blended mixture into a container and add adobo seasoning, oregano, and garlic salt to taste.

Make holes all over the pork shoulder using a knife to allow the marinade to penetrate.

Use a spoon to fill the holes with the marinade mixture, rubbing any remaining marinade on top of the pork.

Place the pork shoulder in a pan with the skin side facing up and set the oven to 375 degrees Fahrenheit.

Bake the pork shoulder in the oven for about 6 hours, checking periodically.

After about 5 hours, scoop out excess water from the pan and pour some back over the pork to help it brown.

Continue baking uncovered for the remaining hour until the pork is browned.

Remove the pork from the oven and let it rest before serving or chopping.

To chop, lift off the skin, use scissors to cut the meat into pieces, and remove the bone.
