In a preheated pot add chicken, onion, garlic, ginger, coriander seeds, black peppercorns, star anise, cumin seeds, black cardamom, salt and water. Cook for 4-5 mins. Remove the scum that appears.

Now cover and cook for 10-15 mins or until chicken is 80% done.

Remove the chicken from the stock. Strain the stock and set aside or later use.

In a pot heat oil and add cumin seeds, black cardamom, star anise, cinnamon stick and cook for a minute.

Add ginger garlic paste and cook for 1-2 mins. Add onion and cook until it gets light brown.

Add yogurt, coriander powder, red chili flakes, salt and cook for a minute.

Now add boiled chicken and cook for 1-2 mins. Add chicken stock and cook for 1-2 mins.

Add soaked rice and cook until 80% water dries out. Now cover and steam over low flame for 10-12 mins.

Your White Chicken Pulao is ready. Dish it out and garnish it with fried onion.
