Cut cheese sticks in half and set aside.
Take half the meat from one sausage, spread it out in your hand, and dust it lightly with barbecue rub.
Add a cheese stick and form the meat around it to cover it completely.
Place the meat-covered cheese sticks on a baking paper-lined tray and sprinkle with barbecue rub.
In a bowl, combine half a cup of barbecue sauce and a tablespoon of hot sauce to make the glaze.
Prepare the Weber kettle by filling a charcoal basket with unlit briquettes and lighting them until fully ashed over.
Once the charcoal is ready, place it on one side of the charcoal grate and add a chunk of cherry wood for flavor.
Place the cheesy meat appetizers on the opposite side of the grill, close the lid, and ensure the vent is over the food.
Check the internal temperature of the appetizers around the 30-minute mark, aiming for 74ยฐC to ensure they are cooked through.
Once the internal temperature reaches 72ยฐC, remove the appetizers from the grill to glaze them.
Roll each appetizer in the glaze and return them to the grill for 5 minutes to tack up the glaze.
Remove the cheesy meat appetizers from the grill and serve.
