Break up the ground beef into smaller pieces.
Whisk the eggs in a bowl and add them to the ground beef.
Add 1/3 cup of panko breadcrumbs and mix.
Incorporate 2 ounces of grated Swiss cheese into the mixture.
Mince 1 tablespoon of garlic and add it to the mixture.
Add 1 teaspoon of Worcestershire sauce and 1 tablespoon of beef rub, mixing gently.
Form the mixture into a loaf shape without overworking it.
Place the formed meatloaf on the grill.
Season the outside with more beef rub.
Preheat the Yoda smoker to 350°F using Hickory pellets.
Cook the meatloaf on the grill for about 1 hour and 45 minutes until it reaches 160°F internal temperature.
While the meatloaf cooks, render 1/2 pound of diced thick cut bacon in a skillet until crispy, then strain off excess fat.
Slice 8 ounces of mushrooms and add them to the skillet with a tablespoon or two of reserved bacon fat.
Cook the mushrooms until softened and browned, then add 1 cup of beef stock and 1/2 cup of heavy cream.
Simmer the sauce until reduced, then stir in the cooked bacon.
Once the meatloaf is done, let it rest for 15 minutes before slicing.
Serve the meatloaf topped with the bacon and mushroom sauce.
