1/2 cup vinegar
1/4 cup soy sauce
1/2 cup water
1/2 tsp black pepper

1/2 cup onion, chopped
1/4 cup ginger, minced
2-3 green chilies, sliced
1/4 cup mayonnaise (optional)
1/4 cup calamansi juice (or lemon juice)

Boil the pork belly in water until tender, about 30-40 minutes. Drain and let it cool.

Once cooled, grill the pork belly until the skin is crispy. Let it rest before slicing.

In a bowl, combine vinegar, soy sauce, water, black pepper, and salt to create a marinade.

Add the sliced pork belly to the marinade and let it soak for at least 30 minutes.

In a separate pan, sauté the chopped onion and minced ginger until fragrant.

Add the marinated pork belly to the pan and cook for another 5-10 minutes, allowing the flavors to meld.

Stir in the sliced green chilies and cook for an additional 2 minutes.

If desired, mix in mayonnaise and calamansi juice for creaminess and tang.
