Cut 1 kg of liempo (pork belly) into cubes.

In a bowl, combine 1/2 cup vinegar, 1/4 cup soy sauce, 1 tablespoon of thinly sliced ginger, 1 tablespoon of salt, and 1 teaspoon of black pepper.

Mix the marinade ingredients well.

Add the pork belly cubes to the marinade and let it sit for about 30 minutes.

After marinating, heat a pan over medium heat and add the marinated pork belly along with the marinade.

Cook the pork belly until it is browned and tender, stirring occasionally.

Add 2-3 green chilies to the pan and cook for an additional 5 minutes.

Serve hot with rice and optionally with cola or beer.
