2 cups sushi rice
2 1/2 cups water
1/4 cup rice vinegar
2 tbsp sugar
1 tsp salt
1 lb fresh ahi tuna, diced
1 avocado, diced
1/2 cucumber, thinly sliced
1/4 cup green onions, chopped
1/4 cup soy sauce
1 tbsp sesame oil
1 tbsp sesame seeds
1/2 tsp red pepper flakes (optional)

Rinse the sushi rice under cold water until the water runs clear.

In a medium saucepan, combine the rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.

Remove from heat and let it sit, covered, for an additional 10 minutes.

In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Stir this mixture into the cooked rice and let it cool to room temperature.

In a large bowl, combine the diced tuna, avocado, cucumber, green onions, soy sauce, sesame oil, and red pepper flakes (if using).

Gently toss the mixture to combine all ingredients evenly.

To serve, place a scoop of sushi rice in a bowl and top with the tuna mixture.

Sprinkle sesame seeds on top for garnish.
