Broad Beans Fry, known as Avarakkai Poriyal in Tamil, is a popular South Indian side dish that highlights the fresh, vibrant flavors of seasonal broad beans. Traditionally served with rice and sambar, this dish is a staple in many households, especially during the harvest season. The use of mustard seeds and urad dal adds a nutty flavor, while the fresh spices elevate the dish. Today, it is enjoyed in various forms across India, with adaptations in different regional cuisines.

Clean the broad beans by cutting both ends and removing the side vein.
Use 500 grams of broad beans for the stir fry and freeze the rest after cutting them into small pieces.
Heat 3 tablespoons of oil in a hot pan.
Add 0.5 teaspoon of mustard seeds and 0.5 teaspoon of cumin seeds to the pan.
Stir in 1 tablespoon of urad dal and 1 tablespoon of split chana dal (optional).
Add 1 tablespoon of garlic paste and 2 sprigs of curry leaves to the mixture.
Mix in 1 tablespoon of chili flakes, 1 teaspoon of turmeric powder, and 0.25 cup of shredded coconut; mix well.
Introduce the cleaned broad beans to the mixture and stir.
Add 1 tablespoon of salt and 0.25 cup of water to the pan.
Cover and cook for 10 to 15 minutes, stirring occasionally to prevent burning.
After 15 minutes, add 0.5 teaspoon of cumin powder (optional) and stir.
Leave uncovered and cook for an additional 5 minutes before serving.
