Sterilize cheesecloth in boiling water.

Measure 500 ml of milk and add to a bowl.

Add 5 to 6 eggs to the milk.

Season with a pinch of salt, nutmeg, and optionally sugar or chives.

Prepare a double boiler by filling a pan with 1 inch of water and bringing it to a boil, then reduce to a simmer.

Stir the mixture frequently until it starts to separate, about 20 to 30 minutes.

Once curds and whey have separated, line a container with cheesecloth and pour the curds through to drain for 10 minutes.

Gather the cheesecloth corners to form a ball and tie with string, then hang over the pot to drain for another 30 minutes.

Let the cheese drain in the fridge for a few hours or overnight.

Unwrap the cheese and slice to serve.
