1 big tomato (for sauce)
2 cloves garlic (for sauce)
1 small onion (for sauce)
handful of finely chopped parsley (for sauce)
3 tablespoons salt (for sauce)
3 tablespoons vinegar (for sauce)
red chili paste (for sauce)
mild flavored oil (for sauce)

Start with a pot of water and cook 1.5 cups of sapayo (or butternut squash) with 1 teaspoon of salt for about 10 minutes or until tender.

Mash the cooked pumpkin with a fork.

Add 1 cup of all-purpose flour to the mashed pumpkin.

Incorporate 2 teaspoons of oil (or melted lard) and 0.5 teaspoons of baking powder.

Add 1 teaspoon of flavorless booze (like vodka) to the mixture.

Gradually add another 0.5 cups of flour, and then more as needed, until the dough doesn't stick to your fingers. Total flour used should be about 2.25 cups.

Let the dough rest for 15 minutes.

Flour the table and roll out the dough to about 4 millimeters thick.

Use a cup or glass to cut the dough into round shapes.

Pinch the rounds with a fork to make holes to prevent them from inflating while frying.

Heat oil for frying and cook the sopaipillas for about 1 minute on each side.
