3/4 cup urad dal
½ inch ginger
1 green chilli
1 tsp red chilli powder
1 tsp coriander powder
½ tsp garam masala
1 tsp saunf (fennel)
1 tsp kasuri methi
1 tsp salt
1 ¾ cups wheat flour
½ cup rava (sooji, semolina)
½ cup lukewarm water
2 tsp oil
2 tbsp desi ghee
1 tsp jeera
1 inch ginger (chopped)
2 green chillies (chopped)
1 tsp saunf crushed (fennel seeds)
1 tsp coriander seeds crushed (sabut dhania)
2 dry red chillies
1 tsp hing (asafoetida)
1 tsp turmeric powder (haldi)
1 tsp red chilli powder
2 tsp soaked methi seeds (fenugreek seeds)
1 tbsp besan (gram flour)
5 boiled potatoes (roughly mashed)
salt to taste
water as required
1 tbsp jaggery/sugar (optional)
1 tsp amchur
a pinch of kala namak (optional)
1 tsp kasuri methi
fresh coriander as required

Wash the urad dal nicely and soak it in enough water for 1-2 hours.

Strain the dal and discard the water. Grind the dal with ginger, green chilli, red chilli powder, coriander powder, garam masala, saunf, kasuri methi, and salt, using minimal water to achieve a coarse mixture.

In a mixing bowl, combine wheat flour, rava, the prepared dal mixture, and oil. Gradually add lukewarm water to knead a stiff dough.

Knead the dough for 3-4 minutes, apply some oil on top, cover with a damp cloth, and let it rest for 30 minutes.

Set a wok or kadhai on high flame and heat oil for frying the puris.

Shape the dough into roundels and roll out thick puris.

Test the oil temperature by adding a small piece of dough; it should rise immediately.

Fry the puris until crisp and golden brown, then strain and leave on absorbent paper to remove excess oil.

For the aloo ki sabzi, boil the potatoes by pressure cooking or boiling until done.

In a kadhai, heat desi ghee and add jeera, chopped ginger, chopped green chillies, crushed saunf, crushed coriander seeds, and dry red chillies, sautéing for a minute.

Add hing, turmeric powder, red chilli powder, soaked methi, and besan, and cook for half a minute.

Add roughly mashed potatoes and water, adjusting as necessary, and add salt to taste.

Cook for 8-10 minutes on medium flame, then add amchur, kasuri methi, and black salt, cooking for an additional 2 minutes.

Garnish with fresh coriander and serve with bedmi puris.
