Process pieces of stale brioche bread in a food processor to make breadcrumbs.

In a bowl, add 1/2 cup of breadcrumbs, 1/4 cup of grated Parmesan cheese, 1 tablespoon of Rosemary, 1 tablespoon of parsley, 1 tablespoon of minced garlic, 1/4 teaspoon of salt, 1/4 teaspoon of pepper, and 2 tablespoons of olive oil. Mix everything together until well combined.
