Herb Crusted Salmon with Tuscan Pasta

Process pieces of stale brioche bread in a food processor to make breadcrumbs.
In a bowl, add 1/2 cup of breadcrumbs, 1/4 cup of grated Parmesan cheese, 1 tablespoon of Rosemary, 1 tablespoon of parsley, 1 tablespoon of minced garlic, 1/4 teaspoon of salt, 1/4 teaspoon of pepper, and 2 tablespoons of olive oil. Mix everything together until well combined.
Coat one salmon fillet in a bit of olive oil and season with pepper, garlic powder, onion powder, Old Bay, and paprika on all sides.
Brush a layer of Dijon mustard on top of the seasoned salmon fillet, then add a layer of the breadcrumb mixture.
Repeat the process with the second salmon fillet.
Place both salmon fillets on a baking sheet and bake in the oven at 400°F for 13 to 17 minutes.
In a pot filled with water, add salt and bring to a boil. Add pasta noodles and cook according to package instructions.
In a large pan over medium heat, add olive oil and 1/2 cup of diced onions. Sauté for about 3 to 5 minutes until translucent.
Add 1 tablespoon of minced garlic to the onions and sauté for about 1 to 2 minutes.
Add 1/2 cup of sun-dried tomatoes and cook for about 5 minutes.
Pour in 1/2 cup of chicken broth and 2 cups of heavy cream, mixing everything together. Bring the sauce to a simmer and let it thicken for about 3 to 5 minutes.
Add 2 to 3 cups of spinach to the sauce and let it cook down until wilted.
Once the spinach is wilted, add 1/2 cup of Parmesan cheese, 1/2 teaspoon of salt, 1/4 teaspoon of pepper, 1/4 teaspoon of onion powder, 1/4 teaspoon of garlic powder, 1 teaspoon of red pepper flakes, 1 teaspoon of Italian seasoning, and 1 tablespoon of parsley. Mix until well combined.
Add the cooked pasta noodles to the sauce and mix everything together.
Plate the Tuscan pasta and top with the baked herb-crusted salmon.
