Garlic Rice

Cultural Context

Garlic rice is a beloved staple in Filipino cuisine, often served as a side dish to complement various meals. Its origins trace back to the need for flavorful, simple dishes that enhance the taste of leftover rice. Today, garlic rice is popular not only in the Philippines but also in many Asian countries, often enjoyed with grilled meats or as part of breakfast.

1

Chop 3 garlic cloves.

2

Heat 2-3 tablespoons of vegetable oil in a 16 centimeters saucepan over medium-high heat and swirl to cover the bottom of the pan.

3

Reduce the heat to low and add the chopped garlic, letting it fry for about half a minute until it starts to turn golden.

4

Add the rice (no need to rinse) and a pinch of sea salt, stirring well with a wooden spoon to coat the rice in oil.

5

Saute over high heat, stirring constantly for about 1 minute, until the grains start to turn whiter and slightly opaque.

6

Measure twice the amount of water to rice in the same container used for measuring the rice and pour it into the pan.

7

Stir once to ensure no grains are stuck to the sides of the pan and bring the rice and water to a boil over high heat.

8

Once boiling, do not stir the rice anymore; turn down the heat to the lowest possible setting and let it cook uncovered for about 4 minutes, until the water reduces and the first grains start to show on the surface.

9

Put the lid on and let it cook for a further 8 to 10 minutes without stirring or removing the lid.

10

After cooking, turn off the heat and let the pan rest with the lid on for at least 5 minutes.

11

Fluff the rice with a wooden fork and taste, seasoning with a bit of fine salt if necessary.
