1.5kg whole chicken (cut into 4 pieces)
1 tbsp salt
1 tbsp red chilli powder
1 tsp black pepper
1 tsp turmeric powder
1 tbsp coriander powder
1 tsp cumin powder
1 tsp garam masala powder
1 pinch yellow food color (mix with 2 tbsp water)
1 tbsp garlic paste
2 tbsp lemon juice
2 cinnamon sticks
2 black cardamom
half cup cooking oil
4 cups of water
1 medium size onion sliced
2 cups basmati rice
fresh coriander as required
green chilli 2-3
almond and raisin 10-12 (fry with 2 tbsp oil for 1 min)

In a large pot, heat the cooking oil and sauté the sliced onion until golden brown.

Add the garlic paste and spices (salt, red chilli powder, black pepper, turmeric powder, coriander powder, cumin powder, garam masala) and cook for a few minutes until fragrant.

Add the chicken pieces and sear until browned on all sides.

Pour in the water and add the lemon juice, yellow food color mixture, and the whole spices (cinnamon sticks and black cardamom).

Bring to a boil, then reduce the heat and cover to simmer until the chicken is cooked through.

Remove the chicken and set aside. Add the basmati rice to the pot and stir well.

Place the chicken back on top of the rice, cover, and cook until the rice is tender and has absorbed the liquid.

Garnish with fried almonds, raisins, fresh coriander, and green chillies before serving.
