Clean the meat by rinsing the goat meat and head with vinegar or lime juice, then wash under cold water.

Boil the meat in a large pot, adding the goat meat, water, and a bit of salt. Bring to a boil, then reduce the heat and simmer for about 1 to 1.5 hours until the meat is tender.

Once the meat is tender, add the green bananas, carrots, onion, garlic, thyme, scallions, whole spice, and whole Scotch bonnet pepper to the pot.

Let the soup simmer for another 30 to 45 minutes or until the bananas are soft and the flavors meld together.

Taste and adjust the seasoning with salt and pepper as needed.

Remove the Scotch bonnet pepper before serving unless you want extra heat.
