2 lbs goat's head, cut into pieces
1 lb goat intestines, cleaned and cut into pieces
1 lb goat feet, cleaned and cut into pieces

In a large pot, combine the goat's head, goat intestines, and goat feet with water. Bring to a boil and then reduce to a simmer.

Add the chopped onion, minced garlic, thyme, and whole Scotch bonnet peppers to the pot.

Simmer for about 1.5 hours, or until the meat is tender.

Stir in the coconut milk, sliced carrots, and green bananas.

Season with allspice, black pepper, and salt. Stir well to combine.

Continue to simmer for another 30 minutes, allowing the flavors to meld.

Remove the Scotch bonnet peppers before serving to reduce spiciness, if desired.
