1500g chicken thighs
1/2 cup oil
9 medium tomatoes
3 large bell peppers
1-2 scotch bonnet pepper
1/2 small red onion
1 bulb of garlic
Handful of chopped onion
12 oz tomato paste
1 1/2 cups blended tomato sauce
2 1/2 teaspoons salt
1 teaspoon thyme
1 teaspoon curry powder
2 cups chicken stock
2 cups water
2 bay leaves
4 single crushed chicken bouillon cubes

Prepare the chicken by marinating it with a handful of onion, ginger, garlic, thyme, curry powder, salt, crushed bouillon cubes, and water.

In a large pot, heat the oil and sauté the chopped onion until translucent.

Blend the tomatoes, bell peppers, scotch bonnet pepper, red onion, and garlic into a smooth paste.

Add the blended tomato mixture to the pot and cook until thickened.

Stir in the tomato paste, blended tomato sauce, salt, thyme, bay leaves, and curry powder, cooking for a few minutes.

Add the chicken stock and water, then bring to a boil.

Stir in the rice, ensuring it is evenly distributed, cover, and simmer until the rice is cooked and liquid is absorbed.

Remove from heat and let it sit covered for a few minutes before serving.
