How To Make Stuff Plantain || Stuff Plantain & Chicken || Stuff Plantain Boat || Simple & Easy Dish

Ingredients
- ●4 ripe plantains
- ●1 cup black beans, cooked
- ●1/2 cup corn, cooked
- ●1/2 cup diced tomatoes
- ●1/4 cup chopped cilantro
- ●1 tsp cumin
- ●1 tsp chili powder
- ●1/2 tsp salt
- ●1/4 tsp black pepper
- ●1/2 cup shredded cheese (optional)
- ●1 tbsp olive oil
Instructions
- 1Preheat the oven to 375°F (190°C).
- 2Peel the plantains and slice them in half lengthwise.
- 3In a skillet, heat olive oil over medium heat and sauté the black beans, corn, diced tomatoes, cumin, chili powder, salt, and black pepper for about 5 minutes.
- 4Remove the skillet from heat and stir in the chopped cilantro.
- 5Place the halved plantains on a baking sheet, cut side up.
- 6Spoon the black bean mixture into the center of each plantain half.
- 7If using, sprinkle shredded cheese on top of the stuffed plantains.
- 8Bake in the preheated oven for 20-25 minutes, or until the plantains are tender and the cheese is melted and bubbly.
- 9Remove from the oven and let cool for a few minutes before serving.

- ●1/2 cup corn kernels
- ●1/2 cup shredded cheese (cheddar or mozzarella)
- ●1/4 cup diced red onion
- ●1/4 cup chopped cilantro
- ●1 tsp cumin
- ●1 tsp paprika
- ●1/2 tsp salt
- ●1/4 tsp black pepper
- ●2 tbsp olive oil
Instructions
- 1Preheat the oven to 375°F (190°C).

- 4Add shredded chicken, black beans, corn, cumin, paprika, salt, and pepper to the skillet. Stir to combine and cook for 5 minutes.

- 6Place the plantain halves on a baking sheet, cut side up. Gently mash the flesh of the plantains with a fork.
- 7Spoon the chicken mixture evenly onto each plantain half.
- 8Sprinkle the remaining cheese on top of the stuffed plantains.
- 9Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- 10Remove from the oven and let cool for a few minutes before serving.

- 3In a mixing bowl, combine the black beans, corn, diced tomatoes, red onion, cilantro, cumin, chili powder, salt, and black pepper.
- 4Fill each plantain boat with the bean mixture, pressing down gently to pack it in.
- 5If using cheese, sprinkle it on top of the filled plantains.
- 6Place the stuffed plantains on a baking sheet and bake for 20-25 minutes, or until the plantains are tender and the tops are slightly golden.
- 7Remove from the oven and let cool for a few minutes.
- 8Top with avocado slices and serve with lime wedges.
