  • 4 ripe plantains
  • 1 cup black beans, cooked

  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup shredded cheese (optional)
  • 1 tbsp olive oil

Instructions

  1. 1Preheat the oven to 375°F (190°C).
  2. 2Peel the plantains and slice them in half lengthwise.
  3. 3In a skillet, heat olive oil over medium heat and sauté the black beans, corn, diced tomatoes, cumin, chili powder, salt, and black pepper for about 5 minutes.
  4. 4Remove the skillet from heat and stir in the chopped cilantro.
  5. 5Place the halved plantains on a baking sheet, cut side up.
  6. 6Spoon the black bean mixture into the center of each plantain half.
  7. 7If using, sprinkle shredded cheese on top of the stuffed plantains.
  8. 8Bake in the preheated oven for 20-25 minutes, or until the plantains are tender and the cheese is melted and bubbly.
  9. 9Remove from the oven and let cool for a few minutes before serving.

Instructions

  5. 5If using cheese, sprinkle it on top of the filled plantains.
  6. 6Place the stuffed plantains on a baking sheet and bake for 20-25 minutes, or until the plantains are tender and the tops are slightly golden.
  7. 7Remove from the oven and let cool for a few minutes.
