2 tablespoons coriander powder
1/2 teaspoon garam masala
salt to taste
1.5-2 cups water

Soak 1 cup of chickpeas in water for at least 6-7 hours or overnight.

Prepare the spice paste by blending 2 large onions, 4 green chilies, 2-inch ginger, and 9-10 cloves of garlic with a little water until smooth.

In a pan, heat 1 tablespoon of mustard oil and add 1/4 teaspoon cumin seeds, allowing them to sizzle.

Add the chopped onions to the pan and sauté until they turn slightly red.

Once the onions are red, add the prepared spice paste and cook on low heat for 7-8 minutes, stirring occasionally to prevent burning.

In a bowl, mix 4 tablespoons of water with 1 teaspoon kitchen king masala, 1 teaspoon Kashmiri red chili powder, 1 teaspoon turmeric powder, 1.5 teaspoons roasted cumin powder, 2 tablespoons coriander powder, and 1/2 teaspoon garam masala to create a spice mix.

Add the spice mix to the sautéed onions and cook on low heat for another 5-7 minutes.

Add the soaked chickpeas to the pan and mix well with the spices.

Pour in approximately 1.5-2 cups of water, ensuring there's enough liquid for cooking.

Add salt to taste and optionally 1 teaspoon of amchur powder for tanginess.

Pressure cook on medium-low flame for about 7-8 whistles, then switch to low flame for 2 whistles before turning off the heat.

After cooking, gently mash some of the chickpeas to thicken the curry, if desired.

Serve the Matar Chole garnished with chopped onions, fresh cilantro, and a squeeze of lemon juice.
