5 cups chicken stock
bok choy (or other green leafy vegetables)
2 portions egg noodles
2 tsp soy sauce
2 tsp fish sauce
salt and pepper to taste

Finely chop 1/2 lb of shrimp until paste-like.

In a mixing bowl, combine chopped shrimp, 1/2 lb of ground pork, and grate in 3 cloves of garlic and an equal amount of ginger.

Add 1 tbsp of Shaoxing wine, 1 tbsp of soy sauce, 1 tbsp of sesame oil, some black pepper, 1/4 tsp of sugar, and 1/2 tbsp of cornstarch to the mixture.

Finely chop green onions, using 1 if large or 2-3 if small, and stir everything in one direction until sticky.

Keep wonton wrappers covered to prevent drying out. Wet each wrapper and place about 1 tsp of filling in the center.

In a pot, add 4 slices of ginger, 2 crushed cloves of garlic, 1 green onion, and 1 dried shiitake mushroom.
