1

Run the shrimp under cold water, let it sit in salt for about 10 minutes, then rinse under cold water again.

2

In a bowl, combine 1 pound of ground pork and 1/2 pound of shrimp.

3

Add 1 cup of finely chopped Chinese chives, 2 tablespoons of finely sliced green onions, 2 cloves of grated garlic, and 1 tablespoon of grated ginger.

4

Mix in 2 tablespoons of soy sauce, 2 tablespoons of sesame oil, 1 tablespoon of oyster sauce, 1 tablespoon of Shaoxing rice wine, and 1/2 to 1 teaspoon of white pepper and salt.

5

Mix everything together until well combined.

6

Add 2 teaspoons of cornstarch to the mixture and mix again.

7

Take a wonton wrapper and place about 1 teaspoon to 1.5 teaspoons of filling in the center.

8

Wet the edges of the wonton wrapper with a finger, bring the corners together, and pinch to seal.

9

For extra security, give it an additional pinch after sealing.

10

The filling makes 66 wontons; save the majority for future meals by placing them in Ziploc bags and freezing them.

11

To cook the wontons, bring a pot of water to a boil and add the wontons, cooking for about 5 minutes until they float to the top.

12

In another pot, bring 4 cups of homemade chicken stock to a boil.

13

Add 1.5 tablespoons of soy sauce, 0.5 tablespoon of Shaoxing rice wine, 0.5 tablespoon of sesame oil, 2 cloves of garlic, 3 slices of ginger, and a couple dashes of white pepper to the stock.

14

Let the broth simmer for about 10 minutes, then taste for salt.

15

Add in leafy Asian vegetables like Chinese broccoli, bok choy, or any other choice.
