In a large pot of water, add the pork bones over high heat.
Bring it to a boil and continue to cook for about 5 minutes.
Discard the water and rinse the pork bones.
In the same pot, add onion, ginger, cinnamon, bay leaves, and water.
Cook over high heat and bring it to a boil, then turn to low heat immediately and simmer for 2 hours.
Take out the bones, herbs, and spices, and any impurities in the stock.
Season the stock with salt, white pepper, sugar, and sesame oil.
In a large bowl, add ground pork and shrimp, season with soy sauce, oyster sauce, Shaoxing wine, sesame oil, salt, white pepper, and sugar, and mix well.
Switch to a bigger bowl if necessary.
Add cornstarch slurry and egg, and whisk.
Add shiitake mushrooms, cilantro stems, and scallion, and whisk again.
Add extra light olive oil to wrap the wontons.
Brush some water on the edges of the wonton wrapper.
Place about a teaspoon of the filling in the center, fold it in half to create a rectangular shape.
Brush some water on the bottom edge and seal them together.
You can make about 36 wontons with the filling prepared.
In a large pot of water over high heat, bring water to a boil.
Blanch the Shanghai bok choy for about 30 seconds and set aside.
In the same pot, over high heat, add the wonton noodles.
Cook about two portions of noodles until al dente for about 2 minutes.
Take the noodles out and rinse with running water.
In the same pot, over high heat, boil the wontons for about 5 minutes.
