Salmon Crusted with Everything Bagel Seasoning

Homemade blend can reduce costs while maintaining flavor.
Zest the lemon, then cut it in half and juice it.
Rinse the capers, then mince them.
Peel the shallot, cut it in half, slice into strips, and mince the other half.
Cut the grape tomatoes in half.
Rinse the chives and mince them.
Preheat the oven to 400°F (200°C).
Prepare a baking sheet with cooking spray, shiny side up.
Brush Dijon mustard onto the salmon fillets.
Sprinkle everything bagel seasoning generously over the salmon.
Place the salmon in the oven for approximately 8 to 12 minutes, checking for an internal temperature of 145°F.
While the salmon is cooking, combine minced capers, minced shallot, 1 tablespoon of lemon juice, and 2 tablespoons of olive oil in a bowl.
Add 1/4 teaspoon of salt and a pinch of black pepper to the vinaigrette mixture and stir.
In another bowl, mix chives with sour cream and a pinch of salt.
Wash the arugula salad leaves, then combine them in a larger bowl and mix gently.
After about 10 minutes, check the salmon; it should be at least 145°F and cooked through.
Plate the arugula salad, then place the salmon on top.
