Kaimati is a beloved Tanzanian dessert, often enjoyed during festive occasions and gatherings. Its origins trace back to Swahili culture, where sweet fried dough balls are a staple treat. Traditionally served with a drizzle of honey and sesame seeds, Kaimati symbolizes hospitality and celebration in Tanzanian households. Today, variations of Kaimati can be found in various forms across East Africa, showcasing local flavors and ingredients.

Cover the dough and let it rise in a warm place until doubled in size, about 1 hour.
Heat oil in a deep pan over medium heat until hot.
Scoop small portions of dough and carefully drop them into the hot oil.
Fry until golden brown, about 3-4 minutes, turning occasionally for even cooking.
Remove Kaimati from the oil and drain on paper towels.
In a separate pot, combine sugar and water; heat until sugar dissolves.
Add cardamom powder and optional rose water to the syrup; stir to combine.
Drizzle the sugar syrup over the fried Kaimati.
