Goan Coconut Chutney Sandwiches

The combination of coconut chutney with fresh vegetables creates a delightful contrast of flavors and textures. Today, these sandwiches have gained popularity beyond Goa, celebrated for their simplicity and vibrant taste.

Grate half a cup of fresh coconut and set aside.
Chop 1/4 cup of fresh coriander and 2 light green chilies finely.
Chop 2 cloves of garlic finely.
Grate 1 inch of ginger.
In a mixer, combine grated coconut, coriander, green chilies, garlic, lemon juice, sugar, salt, and 2-3 tablespoons of water.
Grind the mixture to a paste to prepare the chutney.
Transfer chutney to an airtight glass container and store in the refrigerator for 2-3 days.
Take 4 slices of thick sandwich bread and cut off the edges if desired.
Spread a little butter on all 4 slices of bread.
Spread a generous amount of coconut chutney on one buttered slice.
Top with another buttered slice of bread.
Cut the sandwich in half, and then cut each half again to create mini sandwiches.
