Kabalagala, a popular Ugandan snack, is made from ripe bananas and flour, often enjoyed as a sweet treat or dessert. Traditionally served at celebrations and gatherings, these fritters are a delightful way to use overripe bananas, transforming them into a crispy, golden delicacy. Today, Kabalagala has gained popularity beyond Uganda, with variations appearing in other East African countries and among diaspora communities.

Peel a whole clutch of ripe bananas into a container and smash them into a fine paste.
Add 1 teaspoon of honey (or more to taste) to the mashed bananas.
Add cassava flour and 1 tablespoon of baking powder, mixing until a fine dough forms.
Continue adding cassava flour until the mixture is soft but not hard.
Add sugar to taste, mixing until combined.
Transfer the dough to a flat surface and flatten it out.
Cut out pancakes using a cup or knife, adjusting size as desired.
Gather remaining dough, flatten it, and cut out additional pancakes.
Heat cooking oil in a deep frying pan over medium heat.
Fry pancakes for 5 to 7 minutes until golden brown, turning as necessary.
