Kimbula Banis, or 'Crocodile Buns', is a beloved Sri Lankan snack that reflects the island's rich culinary heritage. Traditionally shaped like crocodiles, these soft, spiced buns are often filled with a savory mixture of onions, spices, and sometimes meat. They are popular at tea time and during festive occasions, showcasing the fusion of local flavors and influences. Today, Kimbula Banis can be found in bakeries and homes across Sri Lanka, enjoyed by people of all ages.

Mix yeast, sugar, and warm water in a bowl; let sit until frothy, about 5-10 minutes.
In a large mixing bowl, combine all-purpose flour, salt, and spices.
Add the yeast mixture and coconut milk to the flour mixture; mix until a dough forms.
Knead the dough on a floured surface for about 10 minutes until smooth.
Place the dough in a greased bowl; cover and let rise in a warm place until doubled, about 1 hour.
While the dough rises, prepare the filling by sautéing onion, ginger, garlic, and green chilies in butter until fragrant.
Add curry leaves and spices to the mixture; cook for another 2-3 minutes.
Once the dough has risen, punch it down and divide it into equal portions.
Flatten each portion and place a spoonful of the filling in the center.
Fold the edges over the filling to seal; shape into a ball.
Place the filled dough balls on a baking sheet; cover and let rise for another 30 minutes.
Preheat the oven to 375°F (190°C).
Brush the tops of the buns with melted butter and sprinkle with sesame seeds.
Bake for 20-25 minutes until golden brown.
Remove from the oven and let cool slightly before serving.
