120 milliliters milk

200 grams sugar (1 cup)
270 grams all-purpose flour (2 cups)
15 grams baking powder (1.5 tablespoons)

Pass all dry ingredients (flour, baking powder, salt) through a sieve, breaking up any lumps with a spoon and set aside.

In a large bowl, combine the natas and sugar, and beat until well integrated using an electric mixer on speed 2 for 2 minutes.

Add the vanilla extract and, with the mixer still on speed 2, add the eggs one at a time, mixing until fully integrated, about 2 minutes.

Add half of the dry ingredients and half of the milk, mixing lightly before turning on the mixer, then switch to speed 1 to integrate.

Once integrated, add the remaining dry ingredients and milk, mixing until just combined, about 30 seconds, ensuring not to overmix.

Turn on the stove to low heat, place a comal (griddle) on the burner, and grease a 24 cm non-stick skillet with oil using a paper towel or brush.

Place parchment paper in the bottom of the skillet, greasing it lightly with the remaining oil.

Pour the batter slowly into the center of the skillet, shaking it slightly to center it, then cover with a lid.

Cook covered on low heat for 65 minutes without lifting the lid. After this time, check with a toothpick; if it comes out clean, it's done.

Turn off the heat and let it cool for 20 minutes before unmolding. If necessary, run a spatula around the edges to loosen it.

Carefully remove the parchment paper and serve.
