1 teaspoon Kashmiri red chili powder

0.5 teaspoons garam masala
1 teaspoon dried fenugreek leaves

Wash 500 grams of green chickpeas thoroughly.

Peel and chop 1 large potato, then wash it to remove starch.

Chop 3 medium-sized onions finely.

Chop 1 green chili finely, adjusting quantity to taste.

Take 1.5 teaspoons of ginger-garlic paste.

Chop 2 medium-sized tomatoes.

Heat a pressure cooker and add 1 tablespoon of mustard oil, heating until it smokes.

Reduce flame and add 1 teaspoon of cumin seeds and a pinch of asafoetida.

Add the chopped onions and sauté until golden brown, stirring occasionally.

Once the onions are golden, add 1 tablespoon of gram flour and sauté for 2 minutes.

Add the chopped green chili and ginger-garlic paste, sautéing for 1 minute.

Add the following spices: 0.5 teaspoons turmeric powder, 0.5 teaspoons cumin powder, 1.5 teaspoons coriander powder, 0.5 teaspoons red chili powder, and 1 teaspoon Kashmiri red chili powder.

Add 1/4 cup of water and mix the spices well, cooking for 3-4 minutes until oil separates.

Add the chopped tomatoes and salt to taste, mixing well and cooking until tomatoes soften.

Cover the cooker without sealing it completely and cook for 4 minutes.

After 4 minutes, stir the mixture and add the green chickpeas and potato, mixing well for 2-3 minutes.

Add 0.5 teaspoons of garam masala and 1 teaspoon of crushed dried fenugreek leaves, mixing well.

Pour in approximately 2 cups of hot water and stir well.

Seal the pressure cooker and cook on medium flame for 4 whistles, then turn off the heat and let the pressure release naturally.

Once the pressure is released, open the lid and check if the chickpeas are soft, cooking for additional whistles if necessary.

Finally, add finely chopped fresh coriander leaves and mix well.
