Singaporean Chilli Mud Crab

Originating in the 1950s, it showcases the country's rich seafood heritage and the influence of Chinese cooking techniques. Today, it has gained international acclaim, appearing on menus worldwide as a symbol of Singaporean cuisine.

Clean the mud crab under running water and remove the shell.
Cut the crab into quarters, discarding the gills and stomach.
Heat vegetable oil in a large wok over medium heat until shimmering.
Add minced garlic and ginger, stir-frying until fragrant, about 1 minute.
Add chopped onion and red chili, cooking until softened, about 2-3 minutes.
Stir in tomato sauce, chili paste, soy sauce, sugar, and water, mixing well.
Bring the sauce to a simmer and let it cook for 5 minutes to develop flavors.
Add the crab pieces to the wok, coating them in the sauce.
Cover and cook for 10-12 minutes, stirring occasionally, until the crab is cooked through.
Mix cornstarch with a little water to create a slurry, then add to the wok to thicken the sauce.
Cook for an additional 2-3 minutes until the sauce is glossy and thickened.
Garnish with chopped green onions and lime wedges before serving.
Serve hot with steamed rice or mantou (Chinese buns).
