Prepare the dough by mixing all-purpose flour, salt, and water until smooth. Rest for 30 minutes.
Boil potatoes until tender, then peel and mash them.
Heat oil in a pan and add cumin seeds until they sizzle.
Add ginger, green chilies, and sauté for 1-2 minutes.
Stir in mashed potatoes, green peas, coriander powder, garam masala, red chili powder, lemon juice, and salt. Mix well and cook for 3-4 minutes.
Remove the filling from heat and let it cool down.
Divide the dough into small balls and roll each into a thin circle.
Cut each circle in half to form two semi-circles.
Take one semi-circle, create a cone shape, and seal the edge with water.
Fill the cone with the potato mixture and seal the open edge to form a triangle.
Repeat with remaining dough and filling.
Heat oil in a deep pan over medium heat until hot.
Fry the samosas in batches until golden brown, about 5-7 minutes.
Remove and drain on paper towels.
Sprinkle sesame seeds on top before serving.
