1

Mix ground beef, Worcestershire sauce, egg, milk, salt, and black pepper in a bowl until well combined.

2

Form the mixture into about six oval patties, about 3/4 inch thick.

3

Heat 1 tablespoon of butter and 1 tablespoon of avocado oil in a 12-inch cast iron skillet over medium-high heat until shimmering.

4

Add the patties to the skillet and cook for about 5 minutes on each side until browned and crispy.

5

Remove the patties from the skillet and cover with foil to keep warm.

6

In the same skillet, add a thinly sliced yellow onion and sauté for a couple of minutes until softened and translucent.

7

Add diced portobello mushrooms and cook for a few more minutes until they are softened.

8

Sprinkle in 2 tablespoons of all-purpose flour and stir to combine, cooking for a minute to remove the raw flour taste.

9

Pour in 2 cups of beef stock while scraping the bottom of the pan to lift any browned bits.

10

Add 1 tablespoon of tomato paste, Worcestershire sauce, salt, and black pepper to taste, and bring the mixture to a boil.

11

Reduce heat to low and nestle the patties back into the gravy, allowing them to finish cooking through, checking for an internal temperature of 165°F.
