1/2 cup rice (soaked for 5 minutes)

In a bowl, add 1 cup yogurt and whisk until smooth.

Add 1 tablespoon gram flour, 1 teaspoon turmeric powder, 1 teaspoon Kashmiri red chili powder, and salt to taste; mix well.

Add water as needed to achieve desired consistency and mix again; set aside.

In a pressure cooker, heat 3 tablespoons mustard oil until hot, then reduce flame to low.

Add 1 teaspoon mustard seeds and let them crackle.

Turn off the flame to prevent burning the spices.

Add 2-3 bay leaves, 2 cloves, 2 small cardamom, 1 whole red chili, 1/4 teaspoon fenugreek seeds, 1 teaspoon cumin seeds, 1 teaspoon crushed coriander seeds, 1-2 pinches asafoetida, 1 green chili, and some curry leaves; stir briefly.

Add 1 tablespoon finely chopped garlic and sauté lightly without browning it.

Turn the flame back on low and add 1 large onion (roughly chopped); sauté until transparent and light pink.

Add 1 teaspoon Kashmiri red chili powder and mix well.

Immediately pour in the yogurt mixture while stirring continuously until it reaches a rolling boil.

Once boiling, reduce the flame to low and add 1/2 cup soaked rice; mix well.

Close the lid of the pressure cooker and place a whistle on top; keep the flame on medium and cook for 2 whistles.

After 2 whistles, turn off the flame and do not open the cooker until the pressure is completely released.

Once the pressure has released, open the cooker to reveal the kadhi chawal.

Garnish with finely chopped fresh cilantro and mix well before serving.
