Masoor and Chana Dal Kebabs

1/2 cup masoor dal
1/2 cup chana dal
1/2 teaspoon turmeric powder
1 teaspoon salt
4 green chilies
1 small onion
1/2 inch piece of ginger
1/2 bunch green coriander
1/2 bunch mint
1 tablespoon roasted and ground coriander
1 teaspoon cumin
1 tablespoon lemon juice
2 tablespoons brown onions
2 eggs

Wash 1/2 cup masoor dal and 1/2 cup chana dal thoroughly.

Soak the washed dal in water for about 3 to 4 hours.

In a pan, add the chana dal with water, 1/2 teaspoon turmeric powder, and salt according to taste (about 1 teaspoon).

Mix well, cover, and cook on low-medium heat until the chana dal is half cooked.

Once the chana dal is half cooked, add the masoor dal to the pan.

Continue cooking both dals until they are soft and the water is mostly dried up.

Allow the cooked dal mixture to cool down.

In a chopper, add 4 green chilies, 1 small onion, and a 1/2 inch piece of ginger, along with 1/2 bunch of green coriander and 1/2 bunch of mint. Chop finely to create a green mixture.

Add the cooled dal mixture to the chopper and chop again until well combined.

Transfer the mixture to a bowl and add 1 tablespoon roasted and ground coriander, 1 teaspoon cumin, and 1 tablespoon lemon juice. Adjust salt if necessary.

Add 2 tablespoons of brown onions and mix everything thoroughly.

Shape the mixture into desired forms, such as croquettes or simple kebabs.

Beat 2 eggs in a bowl and dip the shaped kebabs into the egg mixture.

Coat the kebabs with bread crumbs after dipping in the egg.

If desired, place the coated kebabs in the freezer for 10 to 15 minutes.

Heat oil in a pan and fry the kebabs until they are light golden in color.

Once the kebabs are golden, remove them from the oil and place them on kitchen paper to drain excess oil.
