Cachupa

1 tablespoon olive oil
1 medium white onion, diced
2 large carrots, peeled, halved, and sliced
1 medium sweet potato, diced
4 cloves garlic, chopped fine
2 bay leaves
8 ounces linguiça (chorizo), halved and sliced
1 (15 ounce) can diced tomatoes, no salt added
2 quarts low sodium chicken broth
3 cups green cabbage, thinly sliced
1 tablespoon chili powder
½ teaspoon black pepper
1 teaspoon salt
4 cups frozen chopped kale
1 (15 ounce) can hominy, drained and rinsed
1 (15 ounce) can low sodium kidney beans, drained and rinsed
¼ cup basil, chopped (optional)

In a large pot over medium heat, add oil.

Once heated through add onions, carrots, and sweet potato, and cook until lightly softened, about 5 minutes.

Add garlic, bay leaves, and linguiça, and continue cooking 5 more minutes or until linguiça is lightly browned.

Add tomatoes (with juice), broth, cabbage, chili powder, black pepper, and salt.

Bring to a boil, and reduce heat to simmer for about 15 minutes.

Stir in kale, hominy, and kidney beans, and cook until heated through.

Remove bay leaves and garnish with basil.
