Baleadas

Baleadas are a beloved traditional dish from Honduras, typically enjoyed for breakfast or as a snack. They consist of a thick flour tortilla filled with refried beans and various toppings, reflecting the country's rich culinary heritage. Today, baleadas are popular throughout Central America and have inspired numerous variations, making them a staple in many households.

4 cups AP flour
1 Tbsp Baking powder
1 tsp salt
1/3 cup oil
1 ¼ cups warm water
¼ cup of oil
1 small onion julienned approx. 100 gm
1 can refried beans 550 ml
¼ cup water
275 gm chorizo chopped
7 eggs
avocados
queso fresco
crema de leche

In a big bowl mix the AP flour with the baking powder and salt.

Add 1/3 cup of oil and start mixing while slowly adding 1 ¾ cups of warm water. Keep mixing the dough until the dough is smooth and not sticky. If the dough is sticky, add a little bit of flour.

On a flat surface dusted with flour, knead the dough for 10 minutes.

Cut the dough into 16 pieces, shape the pieces into balls, cover them, and let them stand for 30 minutes.

Shape the dough into thin circles with a rolling pin or your preferred method.

Cook them in a comal or flat grill over medium-high heat for 2 minutes on each side.

Heat up ¼ cup of oil in a pan. Add the onions and cook for 2 minutes over medium heat.

Add the can of refried beans and ¼ cup of water. Mix and simmer for 15 minutes.

In a pan, add the chopped chorizo and cook over medium heat for 5 minutes.

Add the eggs slightly beaten and cook over medium-low heat, mixing constantly until the eggs reach your desired tenderness.

Spread refried beans over half of the tortilla, add the eggs, sliced avocado, crumbled queso fresco, and crema de leche. Fold to close and enjoy.
