Polish Pork Cabbage Rolls

300 g Pork mince
150 g Long grain rice
1 Big white onion
3 Garlic cloves
1 tbsp Dried marjoram
1 tbsp Dried oregano
1 tbsp Sweet paprika powder
1 Egg
1 Young cabbage
500 ml Beef stock
1½ tbsp Tomato puree
Liquid from the Gołąbki
400 ml Tomato Passata
5 All spice
2 Bay leaves
½ tsp Table salt
½ tsp Ground black pepper
15 g Butter
Fresh dill

Add mince, all dente cooked rice, caramelized white onion and garlic, dried marjoram, dried oregano, sweet paprika powder and egg to a big bowl and mix this well.

Leave this in the fridge overnight. The longer the better.

Cook the cabbage in a cooking pot with boiling water and plenty of salt for 7 minutes.

Take the cabbage out and let it rest for 8 minutes.

Take off 14 cabbage leaves and trim the stems.

Add 50 grams of filling in a cabbage leave and roll it like a burrito.

Divide to a oven dish the rest of the cabbage leaves and add the cabbage rolls on top.

Mix the beef stock with tomato puree and add this to the oven dish.

Cover the oven dish with silver foil and add it to a preheated oven at 180℃ for 95 minutes.

After 95 minutes take it out of the oven and add the cabbage rolls on a plate.

Pour the liquid that is in the oven dish in a cooking pan.

Add back the cabbage rolls and cover with silver foil. Let them steam on your workspace. Not in the oven.

Bring the liquid in the cooking pan to a small boil.

Add the tomato Passata to it while stirring.

Keep it on a small boil while stirring for 5 minutes.

Add all spice, bay leaves, salt and black pepper and keep stirring for another 5 minutes.

Add some butter and stir this in. Let it rest.

Add some tomato sauce on a plate.

Add the steamed cabbage rolls.

Add a bit more tomato sauce with some fresh dill.
