Soak masoor dal in water.
In a pressure cooker, add soaked masoor dal with a little turmeric and water, cover, and cook for 2 whistles.
In a separate pot, heat oil and add chopped onions, frying until golden brown.
Add ginger garlic paste and mix well.
Add turmeric, red chili powder, and salt, mixing thoroughly.
Add chopped tomatoes and fresh coriander, mixing well.
Add mutton pieces and mix well, then add 1 glass of water and cover, cooking for 5 whistles.
Check the dal after 2 whistles; it should be well cooked.
Mash the cooked dal and set aside.
Check the mutton after 5 whistles; it should be tender.
Add diced pumpkin to the mutton and cook for another 2 whistles.
Once the pumpkin is cooked, add the mashed dal and tamarind to the pot, adjusting sourness to taste.
Add more water if needed, depending on desired consistency.
Add whole spices and garam masala, then mix well and bring to a boil, cooking until fragrant.
