Place one rack in the lower third of the oven and add a casserole dish or roasting dish filled with hot water about two-thirds of the way up.

Place a second rack in the center of the oven to create a steamy environment for cooking the egg bites.

Dice 12 slices of bacon by cutting them lengthwise into strips and then chopping into a smaller dice, just under a half inch.

Add the diced bacon to a frying pan over medium-high heat and sauté until crispy and cooked to your liking.

Remove the cooked bacon with a slotted spoon or skimmer and place it on a plate lined with paper towels to drain.
