Preheat the oven to 180°C.
In a bowl, combine 40 g each of melon seeds, sunflower seeds, pumpkin seeds, and sesame seeds with crushed walnuts and peanuts.
Spread the mixture on a baking tray and toast it in the oven for about 6 minutes until lightly golden and fragrant.
In a mixing bowl, combine 250 g of cake flour, 130 g of syrup or honey, 50 g of vegetable oil, and 3 g of salt.
Mix until it forms a smooth dough and cover it with a cloth to let it rest for about 2 hours.
After toasting, prepare the filling by combining the toasted seed and nut mixture with 70 g of toasted glutinous rice flour, 60 g of honey, 20 g of oil, and chopped wintermelon, cranberry, and orange peel.
Mix everything until well combined, adding a splash of water if it feels dry.
Take 25 g of dough and roll it into a ball, then do the same with 25 g of filling.
Place the filling ball in the center of the dough ball and wrap the dough around the filling, pinching it closed.
Roll it gently to make it smooth and dust the mooncake mold with flour.
Press the shaped mooncake into the mold and gently remove it to reveal the pattern.
Preheat the oven to 170°C and line a baking tray with parchment paper.
Place the mooncakes on the tray and brush them with an egg wash made from an egg yolk and a pinch of salt.
Lightly spray the mooncakes with water before baking to prevent cracking.
Bake for about 8 minutes, then take them out and apply a second layer of egg wash.
Bake for another 8 to 10 minutes until golden brown, keeping an eye on them to prevent overbaking.
Let the mooncakes cool completely before serving.
