15g White Sesame Seeds, toasted
15g Black Sesame Seeds, toasted
20g Candied Mandarin Peels, chopped
20g Candied Wintermelon, chopped
40g Chinese Sausage (lup cheong), steamed and thinly sliced
20ml Honey
30ml Cooking Oil
1 tsp Sugar
30g Cooked Glutinous Rice Flour
2 tbsp Water
1/2 tsp Salt

Prepare the dough by mixing cake flour, golden syrup, cooking oil, lye water, and salt until smooth.

Cover the dough with plastic wrap and let it rest for at least 30 minutes.

In a bowl, combine the filling ingredients: walnuts, almonds, pumpkin seeds, white sesame seeds, black sesame seeds, candied mandarin peels, candied wintermelon, and Chinese sausage.

Prepare the filling paste by mixing honey, cooking oil, sugar, cooked glutinous rice flour, water, and salt until smooth.

Divide the rested dough into equal portions of 30g each and the filling into portions of 45g each.

Flatten each portion of dough and place a spoonful of the nut filling in the center.

Wrap the dough around the filling, sealing it well, and shape it into a ball.

Dust the mooncake mold with flour to prevent sticking, then press the filled dough into the mold.

Carefully remove the mooncake from the mold and place it on a baking sheet lined with parchment paper.

Brush the tops of the mooncakes with egg wash (1 egg yolk + 2 tsp water).

Preheat the oven to 180°C and bake the mooncakes for 10 minutes, then bake for another 10 minutes until golden brown.
