Chicken Makhani

1 lb chicken thighs, boneless and skinless
1 cup plain yogurt
2 tbsp lemon juice
2 tsp garam masala
1 tsp cumin
1 tsp coriander
1/2 tsp turmeric
1/2 tsp chili powder
1/2 tsp salt
3 tbsp butter
1 onion, finely chopped
4 cloves garlic, minced
1 inch ginger, grated
1 can (15 oz) tomato puree
1 cup heavy cream
1/4 cup fresh cilantro, chopped

In a bowl, combine yogurt, lemon juice, garam masala, cumin, coriander, turmeric, chili powder, and salt. Add chicken and marinate for at least 1 hour, preferably overnight.

In a large skillet, melt butter over medium heat. Add chopped onion and sauté until golden brown, about 5-7 minutes.

Add minced garlic and grated ginger to the skillet, cooking for another 1-2 minutes until fragrant.

Stir in the tomato puree and bring to a simmer. Cook for about 10 minutes, stirring occasionally.

Add the marinated chicken to the skillet, including the marinade. Cook until the chicken is fully cooked, about 15-20 minutes.

Reduce heat to low and stir in the heavy cream. Simmer for an additional 5 minutes to combine flavors.
