Cedar-Planked Salmon

1 plank of cherry wood
1 salmon fillet (tail end)
slices of lemon
marjoram (or oregano)

Soak the cherry wood plank in water for about an hour.

Preheat the wood-fired oven to 180 degrees Celsius.

Place slices of lemon on the soaked plank.

Add fresh marjoram on top of the lemon slices.

Place the salmon fillet on top of the marjoram.

Sprinkle salt and pepper over the salmon.

Insert the meter probe into the thick end of the salmon fillet.

Set the meter to cook the salmon to 55 degrees Celsius.

Place the plank with the salmon into the wood-fired oven.

Push the embers to the back of the oven to create smoke.

Remove the salmon from the oven once cooked and let it rest.

Taste the salmon to check for flavor and doneness.
